Bread

Preparation

Topping
  1. Place 1 cup muffin mix, 1 tablespoon of cinnamon and nutmeg in a medium bowl.
  2. Mix until combined and set aside.
Better
  1. Place remainder of the 5 lb box of muffin mix (4 lb 11 oz), 1 Tbsp cinnamon and applesauce in a large mixing bowl.
  2. Mix using a large rubber spatula until well combined. DO NOT OVERMIX.
  3. Deposit batter into a sprayed or parchment-lined full sheet pan and spread to evenly distribute.
  4. Sprinkle topping evenly over batter.
  5. Convection Oven* 350°F 18-22 minutes | Standard Oven 400°F 22-26 minutes
Finishing
  1. Lightly spray warm applesauce bread with pan spray to set the cinnamon dust. Cool completely.
  2. Cut bread into 64 triangles, an 8x8 cutting pattern.

  • *Rotate pans baked in convection oven one-half turn (180°) after 9 minutes of baking.
