Dry Ingredients
  • Small check mark in a circle icon 1½ cups Gold Medal™ Whole Wheat Flour

  • Small check mark in a circle icon 1 tsp Cinnamon
  • Small check mark in a circle icon ½ tsp Ginger or addition cinnamon if desired
Wet Ingredients
  • Small check mark in a circle icon 2 each Eggs, fresh
  • Small check mark in a circle icon ¼ cup Sugar, dark brown
  • Small check mark in a circle icon 2 Tbsp Vegetable oil
  • Small check mark in a circle icon 15 oz can Peaches, canned in fruit juice
  • Small check mark in a circle icon ½ cup (Optional) Apricots, dried, diced
Optional Topping
  • Small check mark in a circle icon ¼ cup Oats, instant
  • Small check mark in a circle icon 1 Tbsp Sugar, dark brown
  • Small check mark in a circle icon 4 second spray Pan spray

Preparation

  1. Heat oven to 350° F. Lightly coat 8x8 pan with pan spray.
  2. In a large bowl, stir in flour, Bisquick™ and spices and mix with a spoon.
  3. Remove ½ cup of peaches from the can and cut into small dice. Puree remaining peaches and juice then transfer puree to a small bowl. Add eggs, sugar and vegetable oil to puree and whisk until well blended. Stir in diced peaches and dried apricots if desired.
  4. Pour fruit mixture into flour mixture; stir until just moistened. Pour batter into 8x8 pan and spread evenly.
  5. Optional: Stir oats and sugar together and scatter evenly over batter. Lightly coat oat mixture with pan spray.
  6. Bake 28 to 32 minutes or until toothpick inserted in the center comes out clean. Cool completely before cutting into portions.
